This wine is made with Palomino grapes from old vines located in four small plots in As Ermitas. Vineyards planted in stone terraces from the 20th century, at an altitude of 750 metres, facing south/east.
The palomino grape is a variety that has historically been grown in the area and has adapted perfectly to the terroir. The soil is of decomposed granite sand and quartz schist. Sustainable viticulture is carried out.
Whole grape clusters are manually pressed. Spontaneous fermentation, and aging for 24 months in clay amphora and boot.
